Candace Nelson (born May 8, 1974[1]) is an Indonesian-born pastry chef and judge on the TV series Cupcake Wars and Sugar Rush.

Early life[edit]

Nelson grew up in Indonesia.[2] Baking runs in her family, as her French-American grandmother was known for the desserts she created at her San Francisco restaurant in the 1930s.[3] Nelson is a graduate of the Groton School (Class of 1991), Wesleyan University (Class of 1996), and Aunt Marie’s Professional Pastry Program in San Francisco.[4]

Before she got into the bakery business, Nelson and her Oklahoma-born husband Charles (born 1969[1]) were investment bankers.[5] After the dot-com bust, Candace decided to focus on pastry and opened a custom cake shop out of her San Francisco home.[6] She and Charles later moved the business to a former vintage bakery in Los Angeles and began making only cupcakes.

Cupcake Queen [ edit ]

On April 13, 2005, the couple opened Sprinkles Cupcakes, one of the world’s first cupcake bakeries. They started out in a 600 square foot store in Beverly Hills, California.[1] Even though the bakery business was in a four-year no-carb slump, they sold 2,000 cupcakes in the first week.[5] Candace has been described as a “refined” twist on the classic cupcake, using ingredients of the highest quality such as sweet cream butter, Nielsen-Massey Madagascar Bourbon pure vanilla, and Callebaut chocolate.[3] She also creates quirky offerings like vegan and gluten-free cupcakes[8] and even dog food cupcakes.[9] The sleek, minimalist store was designed by an architect from Vienna, and the logo and packaging were redesigned by a former Martha Stewart employee.[1]

Sprinkles now has 24 locations across the United States, including New York,[10] with plans to open in 4 additional cities, including London and Tokyo.[1] The Nelsons also launched a touring “Sprinklesmobile”, a Mercedes Sprinter van designed by Sprinkles architect Andrea Lenardin. In 2007, Candace also developed a line of cupcake mixes that are sold exclusively through her store and Williams Sonoma stores in the United States and Canada. Sprinkles fans include Oprah Winfrey, Blake Lively, Katie Holmes, Ryan Seacrest, Tom Cruise, Barbra Streisand, and Serena Williams.[4]

The origin of the cupcake bakery business can be credited to Candace Nelson, who launched the very first cupcake bakery, Sprinkles Cupcakes (opens in new tab), in 2005. ) Nelson transitioned from a career in investment banking to baked goods in the early years. After the dot-com bubble burst and 9/11, she wanted to find a more meaningful way and “bring a little more joy to the world.” For Nelson was the food. She went to pastry school to learn the basics (and to make sure this was what she wanted). After that, she focused on cupcakes, specifically starting a shop that only sold quality cupcakes with quality ingredients.

“I was certainly challenged by other people with my new idea, but I couldn’t get it out of my head,” she recalls. “When I worked in the business world, we would always get a cake from a local bakery and everyone would say, ‘We need plates, who has a knife, I don’t like carrot cake.'”

Nelson and her husband opened their first cupcake bakery in Beverly Hills with 25 rotating flavors; red Velvet turned out to be an absolute hit. She credits her husband with bringing this flavor to the menu, saying, “My husband is from Oklahoma, where red velvet is a very popular flavor. He said, ‘Candace, if you don’t have a red velvet cupcake, I’ll be laughing out of my state.’ [People] in Beverly Hills had never heard of red velvet, but they said, “I need this red cupcake, this cherry cupcake, maybe it’s called Black Velvet.” They wanted it.”

Fast forward to the present and Sprinkles Cupcakes has 40 locations across the country, including its cupcake ATMs. Nelson has retired from day-to-day operations at Sprinkles (she sold the company to a private equity firm a few years ago, but sits on the board) and has turned her entrepreneurial acumen to other areas of the food and retail industries. She founded Pizzana, a Michelin Bib Gourmand (opens in new tab) New Zealand pizzeria in 2017; founded the children’s learning center Play 2 Progress (opens in new tab) in the same year; and recently founded CN2 Ventures with her husband Charles Nelson, which invests in early and growth stage companies in the retail, grocery, direct-to-consumer and branded consumer goods sectors.

She is also one of the hosts on Netflix’s Sugar Rush, a baking competition show that encourages contestants to let their creativity run free and whip up sweet and sometimes unexpected treats. “The challenges can be far away,” says Nelson. “When they can process [with ingredients like] tobacco or cheese curds and deliver amazing desserts, you know you’re in talented hands.”

With their own hands in so many different businesses, Nelson and her team are adapting and pivoting where necessary – especially during the pandemic. “I like to call it an entrepreneur on steroids because the whole point of being an entrepreneur is that you’re taking a big risk,” she says. “It’s about making sure my kids are fed and Zoom-equipped for school. I have two boys 9 and 13 so they are becoming very independent but still need a little help with zoom links and [ so I can make sure they aren’t still in their pyjamas. I try to get a quick workout in because when you’re working with food the only way to balance it out is by making exercise a priority too. I do intermittent breakfasts in the mornings, so no breakfasts, but I’m a big coffee girl.”

your dressing strategy

“I wouldn’t say it’s changed much as my job is so active and informal. I’m either running around a restaurant or filming content at my house or doing my marketing meetings. I live in Los Angeles so it’s just always so casual anyway. The difference now is less jeans and more sweatpants but I like the feel of jeans more.

For Sugar Rush [I have a stylist] Darshan Gress (opens in new tab). I’m stubborn about what I wear, but darshan has made it scientific, like cut, color and material. This is the little detail that’s interesting on camera but won’t be distracting. At the beginning of the season, she brings clothes racks and clothing racks. We try everything on, take photos and video to see how [the piece] moves, and then narrow down [the selection] to as many episodes as we can. She tailored everything to an inch of her life. You can get something very cheap and then tailor it and it looks expensive. I get comments/questions from people on social media about the outfits I wear [all the time] on the show. I think that speaks to the talents of Darshan.”

“When I’m just super casual, I love jeans and a cute little top from The Great, whether it’s a short sleeve blouse or a puff sleeve. I was obsessed with The Great. Anything they put out [I want].G. Also, since I don’t have any clothes in my life right now, a jumpsuit or one-piece suit is kind of fun and [requires] less decision-making.

I love a good pair of comfortable jeans and I prefer skinny jeans in a good blue with a medium wash because they suck me in and keep everything in place. [For sneakers], I like Isabel Marant and I’m a sucker for Birkenstocks. However, when I’m in the kitchen, I wear kitchen clogs because they protect my feet.

When it comes to jewelry, I like to layer it, but generally I’m lazy to swap out the pieces. I’ll wear necklaces and some bracelets, but they’re always there. I like Cartier and also have a friend who makes beautiful jewelry, Jenna Blake (opens in new tab) and I love Irene Neuwirth (opens in new tab).”
