S am Talbot has certainly lived a sweet life. A former contestant on Bravo’s Top Chef, he is currently executive chef at the incandescent Surf Lodge in Montauk, Long Island. And now this North Carolina native has a book to add to his resume, The Sweet Life: Diabetes Without Boundaries.

The book offers an honest look into Talbot’s life, combining memoir and cookbook in a well-seasoned mix of healthy recipes, cooking tips, travel stories and the chef’s candid account of his life with diabetes. It’s a book he hopes will be embraced by diabetics and non-diabetics alike.

Talbot is a firm believer in sustainable nutrition, using citrus fruits and spices (including plenty of Sri Lankan cinnamon) instead of salt and sugar, and consuming everything in moderation rather than eliminating it entirely. He shared three of his delicious recipes with us: crab ceviche with blueberries and popcorn, striped bass with heirloom tomato scampi, and frozen coconut yogurt with cinnamon. We spoke to the chef on the eve of The Sweet Life’s release to learn more about his healthy, flavorful cooking and the story behind the book.

Epicurious: What made you decide to write this book? What was the inspiration?

Sam Talbot: I’ve had a lot of people approach me about a book. At first I thought I had nothing to write about. I took a long trip across the country and when I came back I thought wow I’ve done a few things and by living with this disease maybe I can share a bit of knowledge and help raise awareness and educate people about diabetes.

Epi: Is that why you decided to write this cookbook like a treatise?

ST: The way I eat, how I exercise, how I travel and where I travel – all of these things affect my life, and diabetes is just another element of that. So instead of categorizing it as this terminal illness, it’s not even a bump, just a trail along the way.

Epi: Are there any cookbooks that influenced you?

ST: I have a huge collection of cookbooks from all over the world. I refer to many of them. My own cookbook falls into a weird category because it’s about lifestyle and cooking, but also medicine in a way. There are many medical cookbooks about diabetes, and they read as if they were medical: uneventful and kind of boring. There’s a book called Crazy, Sexy Cancer by Kris Carr that served as a really good template: I thought it really conveyed the message, ‘You know what? F—cancer.” So without saying “F— you, diabetes,” I think we took a good chance.

Epi: What are some of your favorite recipes in your book?

ST: The crab ceviche is just a really fun and unique pull out recipe that’s always a crowd favorite. For years it was one of the most popular dishes at Surf Lodge. It’s a fun dish: blueberries, shrimp and popcorn. It was my very playful take on the traditional Peruvian ceviche. Another great dish is the egg white for one with blueberries and cinnamon. It’s one of those “living well” dishes. I eat this a lot! The blueberries are high in antioxidants and vitamins A, C and E. It feels good in the stomach. And research shows that everyone really should be using half a teaspoon of cinnamon a day. I believe there are ways to enhance flavors without adding too much salt and fat, and cinnamon is one way I see to avoid adding too much salt.

Epi: In your book you talk about when you first found out you had diabetes when you were 12 years old. You immediately went to a Friendly’s for a giant sundae. Did you have to change your diet the next day?

ST: Either you panic or you race through it. I’ve always been the type to just face facts. I don’t know, even as a 12-year-old kid you know when it’s time to get serious. But I wasn’t perfect at all. I’ve done all the wrong things to acquaint myself with the right thing.

Epi: You also mention that you don’t believe that people have to do without something completely. What was the hardest thing you had to eat less of when you found out you were diabetic?

ST: Well, my best friend has a weird obsession/addiction to french fries and chicken fingers. So I ate a lot of fries and I was like, yo, dude, that’s no good. French fries are not dinner.

Epi: What are some simple changes that people with diabetes can make?

ST: If you’re trying to cut back on salt, maybe try adding a few more spices. Also, I’d say stay away from store-bought pasta sauces. You can enhance dishes by using citrus instead of adding sugary and salty sauces. Try almond milk instead of regular milk. There are ways to enjoy foods labeled as unhealthy. Clam chowder, for example, isn’t the healthiest thing in the world, but you can play with the roux. I use brown rice flour and almond milk to make the roux. It’s these modern wholesome tweaks that I think make this book unique.

Epi: Regarding alcohol consumption, you mention avoiding darker spirits. what about wine

ST: Wine contains more antihistamines, so it raises your blood sugar. Every DNA is a little different. Sometimes people get red faces and that is because they are affected by the antihistamines and may be allergic to them. Not only diabetics should not drink wine. It’s something that people in general should think about and see how their bodies react to it.

Epi: Are there certain cuisines that are better suited for diabetics and don’t require as many substitutions?

ST: I think it’s the best food that goes through your own hands. Take it upon yourself to find foods that are high in bases and low in antihistamines without falling into the madness of the macrobiotic diet. Disease is caused by the acidity in your body, so the higher the alkaline level, the less susceptible you are to disease. Putting your life first, even if you don’t cook every night, will give you the groove to go to the farmer’s market, reach out to fishmongers, and learn about local grocers. This book is intended for everyone. That’s the beauty behind it. It’s for foodies or for people interested in the whole mind, body and soul thing.

Epi: You talk about keeping your stress levels down because stress isn’t good for you. How do you do that when you’re in the kitchen? Is it important to you to eat small meals throughout the day?

ST: I have to remember that. I think chefs and cooks can get lost in their own minds and being in the moment is important. It’s very difficult when you’re cooking for 200 people on a Saturday night and it’s 8pm. and you have managers and cooks and everything goes under. It’s very hard to go back to the moment and think, oh, if I’m not eating… So I’m really trying to be in the present… There were several moments when I had to exit the line. You can ask anyone who has worked with me over the last 18 years of my professional career where I had to exit the line and ask for a cranberry or orange juice or a bowl of pasta. I can’t tell you a person who doesn’t have a Sam Talbot blood sugar story.

Epi: The book also mentions how you fell in love with the food after eating scrambled eggs and cheddar cheese at your grandparents’. How do you pick fresh eggs now?

ST: To be honest, I like to think of it almost as an egg hunt. Right now I have a house in Woodstock, and a while ago I was driving for firewood and I saw a sign that said “Fresh Eggs and Smoked Trout,” and this lady had this whole setup of smoked trout and freshly farmed chicken eggs. Whether you’re in New York City or in a rural area, it’s all about hitting up the local farmer’s market. Even the Union Square Farmers’ Market in New York has a lot of eggplants.

Epi: You had your first cooking job when you were 16. Can you tell us about it?

ST: I started working at Dean & Deluca when I was 16. They had opened a flagship store in Charlotte, North Carolina, where I lived. I was working with these amazing chefs and I was 16 years old and there were these guys who had gone to culinary school – some of them had studied in Paris, some of them at the CIA [Culinary Institute of America].

At Dean & Deluca, they give you this book and you cook through the book. And I remember them saying, ‘OK Sam, today you’re the prep cook. Today you have to make these 10 recipes: you have to make hummus, corn muffins, X, Y, Z.” And I kind of remember sitting there and this guy who was 26 or 27 years old reading this book, and finally I said one day, “Hey man, what’s that?” He was a guy I looked up to about 10 years older. And he says, “I thought you were a serious cook?” to which I said, “I’m not a serious chef, I do this for beer money.” He said, “Maybe you should think differently. You’re good at it.” Anyway, it was Larousse Gastronomique.

I took that week’s paycheck, which was probably like $200 or whatever, and I walked across the street to the mall and went to Barnes & Noble and bought the book. I didn’t understand half of it, but I remember reading it page after page and it was like fuel.

Epi: You have traveled a lot and you discovered many of the ingredients you use to cook with on your travels. Which country has influenced your cuisine the most?

ST: I am passionate about Brazil. You get these crazy pristine breathtaking mountains and then you have this turbulent ocean. The food is good but you talk about Japan and you go to Tokyo and the food is good but then you go to Kyoto and it’s on a whole different playing field. When was the last time you ate and thought, “Wow, that’s a really thoughtful meal”? Everything I had in Kyoto was pure, unadulterated thoughtful.

Epi: Both of your restaurants are considered to be seafood-heavy. In your book, you mention your addiction to the Monterey Bay Aquarium’s Seafood Watch. What is currently your favorite sustainable fish?

ST: It’s so hard to choose. Things are always changing based on Mother Nature. But right now or during the season my favorite, whether it’s from Virginia, Montauk or Block Island, is striped bass. If it’s local. If it hops, it hops.

Epi: Do you have any ingredients that you are obsessed with at the moment?

ST: Fresh stevia, verjuice, almond milk and shirataki noodles.

Epi: Tell us about Stevia. And if you don’t want to use stevia, what other sweetener would you recommend?

ST: I think stevia works wonders when used properly. That one food critic from the New York Post freaked out because those clams I made looked so naturally sweet, and it was really up to me to take hand-shredded stevia leaves and simmer them in the broth. Every greengrocer should have them. And if someone can’t find Stevia, I’d say Truvia is great too.

Epi: What’s next for you? Another place?

ST: I focus on what I have. I’m really looking forward to my book. I just want to see it nurture and grow and I hope people are as excited about it as I am. My whole passion is raising awareness, education and cooking. Not all questions will be answered in this book, so we’ll see what comes next.
